Roast Potatoes, Carrots, and Onions

 Instructions

 

1️⃣ Preheat Oven

Preheat your oven to 475ºF (245ºC).

2️⃣ Prepare the Vegetables

  • Peel and cut the carrots into bite-sized pieces.

  • Dice the potatoes (leave skins on).

  • Cut the onion into eighths.

  • Mince the garlic.

3️⃣ Season the Vegetables

  • In a large bowl, combine the carrots, potatoes, and onion.

  • Drizzle with olive oil.

  • Add minced garlic, thyme, parsley, salt, and pepper.

  • Toss to coat evenly.

4️⃣ Roast Covered

  • Spread vegetables in a single layer on a baking sheet.

  • Cover with foil.

  • Roast for 45 minutes.

5️⃣ Finish Roasting

  • Remove the foil.

  • Roast uncovered for an additional 30 minutes, stirring every 10 minutes until golden brown and tender.

  • Spread vegetables in a single layer to ensure even roasting.

  • Stir regularly during the last 30 minutes to prevent burning.

  • Taste and adjust seasoning before serving.
