No bake Chocolate Eclair Cake

Instructions:

 

  1. Prepare the Filling
    In a medium bowl, whisk together:

    • Pudding mix

    • Milk

    • Cool Whip
      Mix until smooth and well combined.

  2. Layer the Cake
    In a 9×13-inch dish:

    • Arrange a layer of graham crackers at the bottom (break to fit if needed).

    • Spread half of the pudding mixture over the crackers.

    • Add another layer of graham crackers.

    • Spread the remaining pudding mixture on top.

    • Finish with a final layer of graham crackers.

  3. Set in the Fridge
    Cover with plastic wrap and refrigerate for 30 minutes to 1 hour to allow the pudding to set.

  4. Frost the Top

    • Microwave the chocolate frosting (remove lid and foil seal) for about 15 seconds.

    • Stir until smooth and spreadable.

    • Spread evenly over the top graham cracker layer.

  5. Chill Overnight
    Cover the dish again and refrigerate overnight to let the graham crackers soften fully.

  6. Serve
    Slice and serve chilled. The cake gets even better the next day!
