Slow Cooker Stuffed Pepper Soup with Ground Turkey

Directions

 

  1. In a skillet over medium heat, cook the ground turkey with onion and garlic until turkey is browned and onions are translucent.

  2. Transfer the mixture to a slow cooker.

  3. Add bell peppers, diced tomatoes, tomato sauce, and beef broth.

  4. Stir in salt, pepper, and Italian seasoning.

  5. Cover and cook:

    • Low: 6–8 hours

    • High: 3–4 hours

  6. In the last 30 minutes, stir in the cooked rice.

  7. Serve hot.
