Cheesy Cauliflower Casserole
Servings: 6

Ingredients
1 large head of cauliflower, cut into florets
2 tablespoons olive oil
Salt and pepper to taste
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup sour cream
1/4 cup milk
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 cup chopped fresh parsley
Directions
Preheat your oven to 375°F (190°C).
Toss the cauliflower florets with olive oil, salt, and pepper, and spread them out on a baking sheet.
Roast the cauliflower in the oven for about 20 minutes, or until tender and lightly browned.
In a large bowl, mix together the cheddar cheese, Parmesan cheese, sour cream, milk, garlic powder, and onion powder.
Add the roasted cauliflower to the cheese mixture and stir until well combined.
Transfer the mixture to a greased baking dish and spread it out evenly.
Bake in the oven for 25-30 minutes, or until the top is golden and bubbly.
Garnish with chopped parsley before serving.
