Instructions

  1. Preheat oven & prep vegetables – Preheat oven to 400°F (200°C). In a large bowl, combine zucchini, yellow squash, and cherry tomatoes.

  2. Season & toss – Add garlic, olive oil, salt, and black pepper. Toss until evenly coated.

  3. Roast – Spread vegetables on a baking sheet in a single layer. Roast for 25–30 minutes, until tender and golden.

  4. Add cheese & finish – Sprinkle Parmesan in the last 5 minutes of cooking. Garnish with basil if desired.
