Classic Funnel Cakes
Servings: 4

Ingredients
2 large eggs
1 1/2 cups milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup granulated sugar
Oil for frying (vegetable or canola)
Powdered sugar for dusting
Directions
1. In a large mixing bowl, whisk together the eggs, milk, and vanilla extract until well combined.
2. In another bowl, mix the flour, baking powder, salt, and granulated sugar.
3. Gradually add the dry ingredients to the wet ingredients, stirring until smooth and free of lumps.
4. Heat about 1 inch of oil in a deep skillet or frying pan over medium-high heat until it reaches 375°F (190°C).
5. Pour the batter into a funnel or a squeeze bottle with a narrow tip, covering the opening with your finger.
6. Hold the funnel over the hot oil and release the batter in a circular motion to create a spiral pattern.
7. Fry the funnel cake for about 2-3 minutes on each side, or until golden brown and crispy.
8. Use a slotted spoon to remove the funnel cake from the oil and drain on paper towels.
