Spicy Amish Onion Fritters
Servings: 4

Ingredients
1 cup all-purpose flour
1 tablespoon cornmeal
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cayenne pepper
1/2 teaspoon black pepper
2 large onions, thinly sliced
1/2 cup milk
1 egg, beaten
Vegetable oil for frying
Directions
In a large bowl, whisk together the flour, cornmeal, baking powder, salt, cayenne pepper, and black pepper.
Add the sliced onions to the dry ingredients and toss to coat them well.
In a separate bowl, mix the milk and beaten egg together.
Pour the milk and egg mixture over the onions and stir until everything is well combined.
Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
Drop spoonfuls of the onion mixture into the hot oil, flattening them slightly with the back of the spoon.
Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
Remove the fritters from the oil and drain on paper towels.
