A friend who works as a nurse passed along this beloved recipe that always lifted my spirits, and now I'm passing it on to you.

Golden Turmeric Rice
Servings: 4
Ingredients
1 cup long-grain white rice
2 cups water
1 tablespoon olive oil
1 teaspoon ground turmeric
1 clove garlic, minced
1/2 teaspoon salt
Fresh parsley, for garnish
2 cups water
1 tablespoon olive oil
1 teaspoon ground turmeric
1 clove garlic, minced
1/2 teaspoon salt
Fresh parsley, for garnish
Directions
Rinse the rice under cold water until the water runs clear to remove excess starch.
In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the rinsed rice to the saucepan and stir to coat the grains with the oil and garlic.
Stir in the ground turmeric and salt, ensuring the rice is evenly coated with the vibrant spice.
Pour in the water and bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer for 15-18 minutes, or until the rice is tender and the water is absorbed.
Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to allow the rice to steam.
Fluff the rice with a fork and transfer it to a serving bowl.
Garnish with fresh parsley before serving.
