Instructions:
1. Cook spaghetti according to package directions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Sauté onion and bell pepper until soft.
3. Add ground beef, cook until browned. Drain excess fat.
4. Stir in taco seasoning and diced tomatoes. Simmer for 5 minutes.
5. Add sour cream and beef broth. Mix well.
6. Add cooked spaghetti and 1 cup cheese. Toss to combine.
7. Top with remaining cheese and cover until melted. Serve hot.
