Instructions:

1. Prepare the Chicken:
If using chicken breasts, cut them into strips, about 1-inch wide. You can also use chicken tenders if you prefer them.
Season the chicken with a pinch of salt and pepper.
2. Set Up the Breading Stations:
In one shallow bowl, mix together the flour, garlic powder, onion powder, paprika, salt, pepper, and cayenne (if using).
In a second shallow bowl, whisk together the eggs and buttermilk.
In a third shallow bowl, combine the panko breadcrumbs, regular breadcrumbs, and Parmesan cheese (if using).
3. Coat the Chicken:

Dredge each chicken strip in the flour mixture, coating it completely, then dip it into the egg mixture, and finally coat it in the breadcrumb mixture. Press the breadcrumbs onto the chicken gently to ensure an even, thick coating.
4. Fry the Chicken Strips:
Heat vegetable oil in a large skillet over medium-high heat. You want enough oil to cover the bottom of the pan, but the chicken strips should not be submerged. Aim for about 1/4-inch of oil.
Once the oil is hot (you can test by dropping a small piece of bread into the oil – it should sizzle), carefully place the chicken strips in the pan. Don’t overcrowd the pan; fry in batches if necessary.
Fry the chicken strips for 3-4 minutes per side, or until golden brown and crispy, and the internal temperature reaches 165°F (75°C).
Transfer the cooked chicken strips to a plate lined with paper towels to drain any excess oil.
5. Serve:

Serve the crispy chicken strips hot with your favorite dipping sauces like honey mustard, ranch dressing, BBQ sauce, or even a sweet chili sauce!
Tips:
Extra Crispy: If you want extra crispy chicken strips, you can double-dip them: first into the flour mixture, then the egg mixture, and once again into the breadcrumbs.
Oven Baking Option: If you’d prefer to bake them instead of frying, preheat your oven to 425°F (220°C) and place the breaded chicken strips on a baking sheet lined with parchment paper. Spray the chicken lightly with cooking spray and bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
Flavor Variations: Add extra herbs and spices like Italian seasoning, smoked paprika, or a pinch of dried thyme to the breadcrumb mixture for more flavor.
These Crispy Chicken Strips are perfect for a family meal, snack, or game day! The crispy coating and juicy chicken inside are sure to make them a favorite! Enjoy!
