Prepare two different flavors of jelly (e.g., strawberry and orange). Dissolve each separately in 1 cup of hot water, according to the package instructions.
Allow the jellies to cool completely, preferably in the refrigerator, until they begin to set (but not completely harden).
Prepare the cream:
In a bowl, whip chilled heavy cream (30%) with powdered sugar until stiff peaks form. Be careful not to overwhip, as this will cause the cream to separate.
Forming the mosaic:
Once the jellies have set slightly, cut them into cubes.
In a bowl, combine the chopped jelly with the whipped cream, gently folding the ingredients together to create a mosaic effect. You can stir gently to ensure the jellies aren't too evenly distributed – the mosaic effect will be more appealing if the jelly pieces are visible.
